Changing Tides
To celebrate International Prosecco Day, we asked award-winning mixologist Raven Rudolph to create a special pour to celebrate Sea Change Prosecco. Introducing Changing Tides! Enjoy the freshness of Prosecco, followed by the bitterness from grapefruit. The mixture of agave and bubbles together are a great balance, the lime kicks in and the grapefruit takes you home!

Ingredients
Sea Change Prosecco
Lime juice
Grapefruit juice
Agave syrup
Sea Salt
Ice
Method
Swirl a few ice cubes in a glass and leave it while you prepare your ingredients. This will make sure the glass is nice and cold.
Combine 25ml freshly squeezed lime juice and 15 ml Agave syrup (you can use honey instead of agave if preferred), then add 50ml grapefruit juice (freshly squeezed is best – but don’t discard the skin yet!).
Remove the ice cubes from your glass. Pop some salt on a chopping board, rub some of grapefruit skin around half the glass rim and roll the glass into the salt.
Add ice to a cocktail shaker. PRO TIP: hold the shaker at either end to avoid adding heat from your hands to the contents) Give it a good shake, before adding in 75ml of Sea Change Prosecco and gently pouring the mixture into your glass. No shaker? Add your juices into your glass and top gently with the Prosecco.
If you’ve used fresh grapefruit juice, use a small strainer over the glass to catch any pips.
Take a grapefruit rind, and rub flesh side over the side base of your glass for an aromatic hit of grapefruit while you sip! Pop the rind in the drink – and enjoy!
